Description:Lysozyme is suitable for white, powdered crystals, odorless, slightly sweet. The molecular weight of the polypeptide contains 129 amino acids is about 14000, with an isoelectric point of 10.7. Soluble in salt water, acetone, ethanol precipitation. It is more stable in acidic solution. Heating to 55℃ does not affect activity. The solution was completely deactivated when maintained at 62.5℃ for 30min. In 15% ethanol solution, it can be maintained for 30min at 62.5℃ without loss of vitality. In 20.5% ethanol solution, it was kept alive for 20min at 62.5℃. Lysozyme suitable to dissolve the cell membranes of many bacteria, to hydrolyze the glycoprotein polysaccharides in the cell membrane. Natural products such as Lysozyme are suitable for use in proteins.
Lysozyme suitable for extraction from protein. The egg white solution was extracted by adjusting pH value and adsorption with ion-exchange resin. The yield is about 2%(in terms of dry protein raw materials). General commodities are then treated with acidification for food use.
