Tannase is a light black powder. The optimum pH value is 5.5 ~ 6.0 and the optimum temperature is 33℃. The main function is to make tannin water decomposition into tannic acid, glucose and gallic acid.
Tannase is an enzyme. It is mainly used in the production of instant tea to decompose the tannins in order to improve the cold solubility of the finished products and avoid turbid when cooling. When in use, in the tea extraction solution with pH value of 5.5 ~ 6, add the proportion of 2.5g tannase preparation per liter, stir at 30℃ for 70min, then heat up to 90℃ to inactivate the enzyme, centrifuge to remove tannase, and then you can.
Tannase is generally made by controlling the cultivation of aspergillus Niger or penicillum grey-green in CAI's medium containing 2% tannic acid and 0.2% casein hydrolysate, taking out the mycelium and drying with acetone precipitation.
