Description:Polyaminetransglutaminase white to pale yellow to dark brown powder or particles, or for transparent yellow to dark brown liquid. Soluble in water, insoluble in ethanol, hygroscopic. The alpha - glutamyl group in the protein peptide is converted to the epsilon - amino group in the lysine residue of the peptide. Transglutaminase catalyzes crosslinking reaction to modify proteins and improve their plasticity, water-holding capacity, water-solubility and functionality. As a protein improver, transglutaminase has great application prospects in food industry. At present, it is widely used in meat products, dairy products and vegetable protein products to improve the quality of products. In noodle processing, transglutaminase can promote the cross-linking between other proteins and gluten proteins, improve the structure of gluten network, and thus improve the quality of finished noodles.
Polyaminetransglutaminase can be extracted from liver, but industry commonly by microorganisms such as actinomyces or after bacterial culture, the culture water at room temperature with cold ethanol extraction in aseptic processing.
