Maltase-glucoamylase is a saccharide digestive enzyme. It is existed mainly in mucosa and its function is to hydrolysis maltose, beta-limit dextrins and some kind of cyclodextrins.
Maltase glucoamylase is a white to light brown powder. The main enzymes are alpha - amylase (liquefactase) and beta - amylase (maltose). The main function of alpha-amylase is to hydrolyze the alpha-1, 4-glucan bonds in starch, glycogen and other polysaccharides into dextrins, oligosaccharides and monosaccharides. The main function of beta-amylase is to hydrolyze the alpha -1, 4-glucan bond in starch, glycogen and other polysaccharides into beta-ultimate dextrin.
When the barley germinates to about 1.5 times the length and diameter of the wheat, it is taken out as "green malt" with about 40% ~ 45% water.
