A 'lipase' is a water-soluble enzyme that catalyzes the hydrolysis of ester chemical bonds in water-insoluble lipid substrates.Lipases thus comprises a subclass of the esterases.
Lipases perform essential roles in the digestion, transport and processing of dietary lipids (e.g. triglycerides, fats, oils) in most, if not all, living organisms. Genes encoding lipases are even present in certain viruses.
Lipase is a nearly white freeze-dried powder or creamy yellow powder, soluble in water, with an optimal temperature of 35 ~ 370C.
Lipase is prepared from animal tissue: the first stomach feeding tissue of a calf, goat or lamb, or the pancreas of an animal. Obtained by water extraction after purification of the two edible tissues.
Lipase can also be formed by filtering the fermentation liquid after the cultivation of aspergillus Niger mutant, aspergillus oryzae mutant or pseudocyst, salinizing with 50% saturated ammonium sulfate solution, using acetone for segmenting precipitation, and then crystallization through dialysis.
