α-Amylase is an enzyme that hydrolyses alpha-bonds of large alpha-linked polysaccharides such as starch and glycogen, yielding glucose and maltose. It is the major form of amylase found in humans and other mammals.It is also present in seeds containing starch as a food reserve, and is secreted by many fungi.
Alpha-amylase is a nearly white to light brown yellow amorphous powder, or a light brown to dark brown liquid. It is almost insoluble in ethanol, chloroform and ether. Soluble in water, aqueous solution yellowish to dark brown.
The main active enzymes of alpha-amylase made from aspergillus Niger varieties include :(1) alpha-amylase (liquefactase); (2) pectinase (generally a mixture of pectinase methyl esterase, polygalacturonase and pectinate lyase); (3) cellulase; (4) glucoinvertase (starch glucosidase); (5) hemicellulase; (6) lactase; (7) beta-glucanase.
Alpha-amylase was prepared from aspergillus oryzae varieties, and mainly consisted of: (1) alpha-amylase; (2) glucoinvertase (starch glucosidase); (3) lactase.
Alpha-amylase is made from yeast, and its main enzyme is (1) invertase. (2) lactase.
Alpha -Amylase is made from tricordyma, and the main enzyme is cellulase.
